The Lovely European Blackberry

(european blackberry found at invasive.org under cc)

This lovely plant has beautiful white to lightest pink during the early spring time. It keeps a loose petalled flower til about may and then drops it and produces red to black fruit which our little furry rabbits, squirrels and deer just love.

There are plenty around enough to grab for a pie though. Almost every year throughout Alabama, Georgia and Tennessee, grannies and kids pick them and make pies and cakes out of them (they are decadent and very delicious)

I love the blackberry  jams and preserves you put on biscuits and scones. You can also add some to your vanilla non-fat yogurt. It is full of vitamin c and a. Some says it's  a cure all as well.
A few notes on the European Blackberry. She's a fast grower, she loves all conditions, and she belongs to the rubus class. This is one wild grower in our area but there are several. You dress and prepare this edible plant like any other berry. Recipes are found throughout the internet.
